The mouth begins the first mechanical digestion by chewing and swallowing the food. Chewing the food mixes with saliva; saliva contains an enzyme ‘salivary amylase’ which breaks down starch (also known as polysaccharides) molecules into sugars. This is when we chew a piece of bread (in my case I have my sandwich) longer it begins to taste sweet. The saliva beside digestion action also contains mucus which moistens the food and with combined action of our lips, teeth and tongue form the food into a food ball or bolus. Then by swallowing the food is moved on its way from the mouth into the stomach through a 25cm long muscular tube called oesophagus.
